Ingredients; mama instant noodles 2 (or any instant noodle you like), lean pork meat 200gr, teriyaki sauce 2tbsp, dark soy sauce 1tbsp, mirin 1tbsp, mustard leaf or water convolvulus 300gr, fish sauce 1tbsp, garlic 1clove, sunflower oil 4 tbsp, sambal 1 tbsp.
Cut the pork in very thin slice. Mix teriyaki sauce, dark soy sauce, mirin and fish sauce. Marinate the pork for 1 hour in this mixture. Bring 250 cc water to the boil and add the condiments that come with the noodles. Break the noodles and add. bring to the boil and cook for about 3 to 5 minutes 5until most of the liquid is absorbed. Meanwhile heat a wok add half of the oil, add the sambal and stir fry for 1 minute. Add the drained pork, keep the liquid. fry over high heat. After a few minutes add half of the marinating mixture. You might need to add some more later.
Heat a wok or frying pan add the rest of the oil. Add finely chopped garlic, after about a minute add the mustard leave or water convolvulus. Fry on high heat for 1 to 2 minutes.
Place the noodles on a plate and dress with the vegetables and the well done pork. add the sauce from the pork if you like.

Pork and dark beer Lao stew
Ingredients; Pork stew meat 1 kg (cubed), 3 big onions, bay leaves, fish sauce 3 tbsp, garlic 2 cloves, white wine vinegar 4 tbsp, palm sugar 1 tbsp, dark beer Lao 1 bottle, raisins 150 gr., chilli flakes 1 teaspoon
Dust the pork with a little flour. Heat oil in a saucepan until sizzling, add the pork. Cook over medium heat until brown, add the chopped onions. Stir occasionally until the onions start to get soft.
Add the Beer Lao, bay leaves, garlic, sugar, fish sauce, chili flakes and vinegar. Let it simmer for at least 40 minutes, stir occasionally.
Add the raisins and cook for another 20 minutes. Taste and add more fish sauce, sugar or vinegar to your taste.
Dust the pork with a little flour. Heat oil in a saucepan until sizzling, add the pork. Cook over medium heat until brown, add the chopped onions. Stir occasionally until the onions start to get soft.
Add the Beer Lao, bay leaves, garlic, sugar, fish sauce, chili flakes and vinegar. Let it simmer for at least 40 minutes, stir occasionally.
Add the raisins and cook for another 20 minutes. Taste and add more fish sauce, sugar or vinegar to your taste.

Pad kra pao...
Ingredients: shallots 2, red chili peppers 2, garlic cloves 3 to 4, fish sauce 1 tbsp, light soy sauce 1 tbsp, a little sugar 1 tsp, minced meat (pork or beef) 250 gr., holy basil (or bai kaphrao), bird's eye chilies 10, sunflower oil 2 tbsp
Chop the shallots and chili peppers finely. Heat a frying pan, add the oil. Fry the shallots and chilies
for 1 to 2 minutes. add the smashed garlic cloves , fry for 1 more
minute. Now add the minced meat and fry while breaking it up into small parts with a fork or spoon. When almost ready add the fish sauce, sugar and soy sauce. mix well, add the chopped basil and turn off the heat. Serve with steamed rice and the sliced bird's eye chillies (if you like it hot).
Pad Kra Pao chicken; use little strips of chicken instead of minced meat.
You can make a vegetarian pad Kra Pao using soy meat.

Asparagus with pork
Boil the asparagus in salted water. (There must still be a bite to them). Drain and keep a little cooking fluid. Boil water, turn of theheat and add bean sprouts. After 2 to 3 minutes drain the bean sprouts.
Season the pork with salt and pepper. Heat a frying pan and add the butter. Once the butter starts turning brown add sambal. Fry for a minute and add pork and smashed garlic. fry pork 5 to 7 minutes each side (it needs to be pink inside). Remove the pork, set aside to rest.
De-glaze the frying pan with rice wine. Add 10 cl of cooking fluids (asparagus), oyster sauce and fish sauce. After 1 minute add Slice asparagus, fry for one more minute. Now add the bean sprouts.
Slice the pork. Add the juice from the meat to the frying pan. turn of the heat.
Serve over steamed rice or noodles.

recipes: pork tenderloin with yogurt
Ingredients: 800 gr pork tenderloin, 100 gr mature cheese, 1 L. firm yogurt, pepper, salt, 1 tbsp.paprika powder, 50 gr plain flour, parsley, 2 medium sized onions, 50 gr butter, some toothpicks.
Cut the pork in approximately 8 cm long pieces, and slice 'em halfway through (lengthwise). Cut up the cheese so you have piece of 1x1x8 cm. put the cheese inside the pork, close the meat and use 2 toothpicks for each piece to keep them closed.
Mix the flour and paprika powder. Put some pepper & salt on the meat and roll it in the flour mix until it is covered. Melt the butter in a cooking pot and fry the pork for a few minutes until it is sealed.
Meanwhile cut the onion into small pieces and once the meat is sealed and a little colored, add the onions. Turn down the fire close the cooking pot, let it simmer until the onions are soft and glazy. Add the yogurt, pepper and salt and cook softly for about 45 to 60 minutes. Stir once in a while.
When the yogurt doesn't thicken enough you might want to use some extra flour, dissolve the flour in a bit of warm water before adding. Cook for a few minutes while stirring Add the parsley and serve.
We serve it with mashed potatoes.
